"Oh we do love to be beside

the seaside...." - and we were not the only ones this Sunday to enjoy a perfect day in Redcliffe.

We began with an impromptu rendering of the song (which the neighbours must have enjoyed.) Then during the run briefing a couple of naughty boys were disciplined by being hugged by the hare (the neighbours must have enjoyed this too - I'm sure the naughty boys did.) I think we did just as well as Basil Rathbone:



Topless once again led us along the shore and through the inland, including many tricky navigational surprises along the way. Once back home, she treated us to a three-course feast (including Dutch honey cake) and some German plum liqueur! Yum - and vielen dank!

Talk of food reminds me: here (by popular request) is a recipe for the dish that Bigtop served up the week before...

Chicken & Coriander Chilaquile

Ingredients:
10 Flour tortillas cut into strips
Meat from a cooked chicken cut into bite size pieces
400ml jar Salsa medium hot
400ml chicken stock
3 toms finely chopped
1 capsicum finely chopped
1/4 cup coriander finely chopped
2 tsp garlic
1 tsp ground cumin
3 cups grated cheese

Place tortilla strips on baking tray & bake for 30 mins @ 180 deg.
Combine salsa,stock,coriander,capsicum,toms,cumin & cheese, mix well.
In a large wide casserole dish put half the chicken,spoon over 1/3 of salsa mix.
Layer with 1/2 of tortilla strips. repeat with chicken, 1/3 salsa mix & the other 1/2 of tortilla strips.
Finish with remaining salsa & sprinkle the top with cheese.
Bake 30 mins @ 180 deg.
