Fast falls the eventide...

It fell so fast this Sunday that the walkers got home in the dark - and with the dark came the evening chill. A brazier at the on, on was very welcome. And the fire in the brazier was even more welcome. Makes you think...a number of us will be camping at Jimna State Forest on the first weekend of June. Are we mad, or what?

Our hares led us on a scenic jaunt around the back blocks of Cashmere and Eaton's Hill, and found a few ups and downs to enliven the route. A few suicidal small dogs came racing out along the way to take on Bruno, Cassie and Heimie. Were they mad as well?

A special treat at the on, on was Cash Converta's zucchini soup. Here, by popular demand, is the recipe:

Zucchini & Macadamia Soup

Serves 8
Prep time 10 minutes
Cooking time 15 minutes
Suitable for freezing

1 tablespoon extra virgin olive oil
1 kg zucchini, grated
4 garlic cloves, crushed
Half small fresh red chilli, finely chopped
5 cups (1.25L) chicken stock
Two thirds cup (90g) macadamia nuts
1 1/4 cups (100g) grated parmesan, plus extra to serve

1. Heat oil in a large saucepan on high. Cook zucchini, garlic and chilli for 10 minutes, until zucchini softens. Add stock. Bring to boil and simmer for 5 minutes.
2. Process macadamias to a fine meal. Stir three-quarters of macadamia meal and grated parmesan through zucchini mixture. Using a hand held blender, blend until smooth.
3. Season to taste. Top with remaining macadamia meal and extra parmesan and serve.

Yum!! Serious yum!!
